(IT GOES IN THE NAUGHTY BUT NICE - less than 3 times a year treat corner)\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e1 packet\u003cspan\u003e \u003c\/span\u003e\u003ca href=\"http:\/\/arnotts.com.au\/\"\u003eArnotts\u003cspan\u003e \u003c\/span\u003e\u003c\/a\u003eMorning Coffee biscuits\u003cbr\u003e\u003cem\u003e\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eLemon coconut filling\u003c\/em\u003e\u003cbr\u003e125g (1\/2 block) Copha, melted\u003cbr\u003e395ml (1 can) condensed milk\u003cbr\u003e2 cups desiccated coconut\u003cbr\u003eJuice of 1 Large \/  2 x small ones (depends how lemon zingy you like it)\u003cbr\u003eRind of one lemon, grated finely\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eLemon Icing\u003c\/em\u003e\u003cbr\u003e50g Copha, melted\u003cbr\u003e1 1\/2 cups icing sugar, sifted\u003cbr\u003e1 tbsp lemon juice\u003cbr\u003e1\/2 tsp vanilla extract\u003cbr\u003e3-4 tbsp hot water\u003cbr\u003ecinnamon to shake over top of slice at the end before putting in fridge\u003c\/p\u003e\n\u003cp\u003eLine a small lamington \/ slice baking dish.  (20cm x 20cm ideal)\u003c\/p\u003e\n\u003cp\u003ePlace a layer of biscuit over slice baking tray.  (split half biscuits for top and half for bottom, if uneven eat the odd one so there it no evidence.. hahaha) place top facing up!!\u003c\/p\u003e\n\u003cp\u003ePlace condensed milk, coconut, lemon juice and rind in a bowl.\u003c\/p\u003e\n\u003cp\u003eAdd melted Copha and mix until combined.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eSpread mixture over biscuit base and top with another layer of biscuits. \u003cbr\u003e*Note - 1inch thickness is ideal!!! (1.5cm of the coconut filling mixture \/ thickness of index finger).\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003ePlace icing sugar, lemon juice and vanilla in a small bowl.\u003c\/p\u003e\n\u003cp\u003eAdd melted Copha and mix well. \u003c\/p\u003e\n\u003cp\u003eAdd enough water to thin the icing to a spreadable mix. Spread icing on top of slice and sprinkle with cinnamon and it you like it extra coconutty then a few more sprinkles of coconut\u003c\/p\u003e\n\u003cp\u003ePlace in the Fridge for an hour and then Cut into squares and store in an airtight container in the fridge. (Cut into squares the same size as the biscuits for ease)\u003c\/p\u003e\n\u003cp\u003eENJOY!!!
