Mango Turmeric Chia Energy Gummies
Ingredients:
- 1 cup mango puree (fresh or canned)
- 1/2 cup coconut water

- 2 tbsp chia seeds
- 1/4 tsp ground turmeric
- 1 tbsp honey or maple syrup (optional)
- 2 tbsp gelatin powder (or agar-agar for a vegan option)
- 1/2 cup filtered water
- Pinch of sea salt
- Zest of 1 lime
Directions:
1. In a small saucepan, combine the filtered water and gelatin (or agar-agar). Let it sit for about 5 minutes to bloom.
2. Place the saucepan over low heat and stir gently until the gelatin dissolves completely. Do not let it boil.
3. In a mixing bowl, combine the mango puree, coconut water, turmeric, honey (if using), and sea salt. Mix well.
4. Once the gelatin is dissolved, add it to the mango mixture and stir until fully incorporated.
5. Stir in the chia seeds and lime zest. Let the mixture sit for about 10 minutes to allow the chia seeds to swell.
6. Pour the mixture into silicone molds or a shallow dish lined with parchment paper.
7. Refrigerate for at least 2 hours, or until set.
8. Once set, remove the gummies from the molds or cut them into squares if using a dish.
