SANAME - Chicken Orange & Walnut Salad infused with SUPERBONE P360 Collagen BoneBroth

A Light Refreshing High Protein Low Carb Salad

Serves 2

 

    For the dressing:
    • 1 tbsp. of honey
    • 2 tbsp. mustard (optional)
    • 1 tbsp. olive oil
    • 1 tbsp. lemon juice
    • 2 tbsp. orange juice
    • ⅓ tsp. (pinch) cinnamon

     

    For the salad:
    • 200g chicken breast
    • 1 scoop of SANAME SUPERBONE BoneBroth mixed with 1 scoop of warm water
    • 4 handfuls rocket 
    • ¼ iceberg lettuce
    • 1 orange
    • ⅓ pomegranate fruit, seeds
    • ¼ cup (30g) pecans, roasted or other nut of your liking (can use pine nuts, peanuts or a variety of mixed nuts
    * (can also use SANAME Vietnamese Pho, Tom Yum or Red/White Miso BoneBroths to give a different flavour)


     

    Instructions

     

    1.Peel orange and cut into quarters, cut 3/4 of orange up and Squeeze the juice from the remaining 1/4 segment of the orange for the sauce.

    2.Mix the ingredients of the dressing in a cup, season with salt and pepper.

    3.Cut the chicken breast into slithers, season with salt/pepper, coat with olive oil and place on a hot grill pan — grill for 2-3 minutes.

    4.Drizzle the chicken pieces with a 2 tbsps. of dressing and continue to grill for about 1 minutes on a slightly lower heat. Add SANAME mixture and grill for another minute or so until reduced. Remove from the pan and set aside. 

    5.Mix the salad leaves and divide it between two plates, then top with the orange and chicken. Sprinkle with the pomegranate seeds and roasted pecans, Drizzle with the remaining dressing and serve.
